METHOD
- Let the butter soften at room temperature for 1-2 hours, depending on the ambient temperature.
- Place the CAONOVA 53% in a large bowl.
- Heat the milk, heavy cream, and invert sugar without exceeding 80°C.
- Pour this mixture over the CAONOVA 53% and blend until smooth. For a better texture and shine, using an immersion blender is recommended.
- When the mixture cools to approximately 40°C, add the butter and blend again until fully incorporated.
- The sauce should be used once cooled but while still fluid.
